Pop Up: Taking the Biscuit

The last year has been tough, but for some, the drastic restrictions have brought about positive change. Among them, pastry chef Kimberly Lin, who credits the pandemic with providing her with the opportunity to launch Floozie Cookie. She tells us: “Like many chefs, I always had a fantasy project in my head. I chose the cookie because it has always struck me as underrated and overlooked, but to me it expresses care, skill and creativity, a treat without pretence… it can bring such joy.” Her all-vegan menu features treats like the classic Chocolate Chunk and PB&J (a gluten free peanut butter cookie stuffed with homemade raspberry jam), while this month’s special is the Red Velvet (stuffed with a raspberry white chocolate centre and coated in red sprinkles). Who could resist?
